What You’ll Need
¾ lb Alii Mushrooms — 1/2″ cubes
¼ lb Shimeji or Piopinni mushrooms, diced
½ Cup Diced sweet onion
¼ Cup Sliced green onion
1 Teaspoon Togarashi
½ Tablespoon salt
¼ Cup shoyu
2 Tablespoons sesame oil
1 Gallon water
1 Hand ginger, Smashed
½ Cup mirin
Heat water, ginger, and mirin.
Poach mushrooms for 20 minutes, do not boil.
Remove mushrooms and cool, save liquid for soup.
Mix onions with togarashi, shoyu, sesame oil, and salt and toss mushrooms in mixture.
